Triple Chocolate Chip
Get ready because you are about to read the best cookie recipe of all time. I am not kidding, I don't know if there is anyone out there who wouldn't love this recipe, it is the ultimate crowd pleaser!
This recipe can make anywhere between 12 monstrous cookies to 40 bite sized ones, it's completely up to you. However, the cookies will all disappear immediately, regardless of the number that you make.
Ingredients
200g stork/margarine300g caster sugar1 large egg275g self-raising flour75g cocoa powdera dash of milk (Optional)100 grams white chocolate chips100 grams milk chocolate chips100 grams dark chocolate chips
Method
Preheat your oven to 180ºC. Line baking trays with parchment paper.
Cream together the margarine and sugar until light and fluffy (the fluffier the better). Once the mix is smooth, add in the egg and whisk until fully blended.
Combine the flour and cocoa powder in a separate bowl and a little bit at a time, sift in the dry ingredients until combined. If the mixture is looking a little dry then you can add in a dash of milk. The mixture will become very thick so it is better to use a wooden spoon rather than an electric whisk. Mix the chocolate chips into the mixture.
Divide the cookie dough into the number of cookies you want and place on the lined trays. DO NOT flatten the dough as they won't cook as well.
Bake the cookies for 10-12 minutes in the oven, when they come out they will look very gooey. Leave the cookies to cool (this is a battle of willpower) because they will then carry on cooking and harden once out of the oven.
My Thoughts
On the cookie texture scale I would say these are more of a cakey cookie that a biscuit, very soft and gooey yet they still hold their shape.
You could swap out the chocolate chips for a chocolate bar instead, this would add a different texture to the cookie. Unsalted butter can be used instead of margarine but I find the texture is not as soft and is a drier consistency overall.
